As it was so spontaneous we brought with us whatever we could find at home, such as crisps, cheese, biscuits and one solitary tomato. This tomato-gate is now a running joke within the Boon family. Alas, don&#8217;t be like the Boons and read this guide to throw the perfect picnic\u00d4\u00c7\u00aa<\/p>\n\n\n\n<p>Gone are the days when a picnic consisted of sweaty shrivelled up sandwiches encased in some sad looking tin foil. If you&#8217;re more of a savoury person then listen up, because this is the recipe for you:<\/p>\n\n\n\n<p><strong><u>Chicken Caesar Salad<\/u><\/strong><\/p>\n\n\n\n<p>This salad can be prepared just before you walk out of the door. All you need is:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Leftover Roast Chicken\/ Plant-Based Chick&#8217;n &#8211; (As much as you fancy)<\/li><li>Mixed Salad Leaves and Iceberg lettuce \u00d4\u00c7\u00f4 (As much as you fancy)<\/li><li>Caesar Salad Dressing (I recommend Pizza Express or Caesar Cardini&#8217;s)\u00d4\u00c7\u00f4 A drizzle<\/li><li>Leftover bread \u00d4\u00c7\u00f4 One slice<\/li><li>Olive Oil \u00d4\u00c7\u00f4 3 tbsp<\/li><li>Balsamic Glaze \u00d4\u00c7\u00f4 A drizzle<\/li><li>Italian seasoning \u00d4\u00c7\u00f4 1 tbsp<\/li><li>Salt and Pepper to garnish<\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Preheat the oven to 180C.<\/li><li>Take your iceberg lettuce and slice into strips (As much as you fancy).<\/li><li>Mix in the Leftover Roast Chicken\/ Plant-Based Chick&#8217;n.<\/li><li>Drizzle the Caesar Salad Dressing over the top.<\/li><li>Squeeze the balsamic dressing over the leaves.<\/li><li>Take the slice of bread and rip into small chunks.<\/li><li>Get a bowl and throw in the bread chunks.<\/li><li>Pour on the olive oil and then sprinkle salt, pepper and Italian seasoning over the bread and mix together.<\/li><li>Pop them onto baking tray and into the oven.<\/li><li>Bake for about 10 minutes (or until golden), mixing every few minutes.<\/li><li>Serve the croutons alongside the salad and voila!<\/li><\/ol>\n\n\n\n<p>A nice accompaniment to the Caesar Salad is focaccia bread. This is the type of recipe that requires some prep so maybe make it the day before.<\/p>\n\n\n\n<p><strong><u>Roasted Tomato and Olive Focaccia Breadsticks<\/u><\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"621\" src=\"https:\/\/cardiffstudentmedia.co.uk\/quench\/wp-content\/uploads\/sites\/3\/2021\/05\/focaccia-3771454_1920-1024x621.jpg\" alt=\"\" class=\"wp-image-29784\" srcset=\"https:\/\/cardiffstudentmedia.co.uk\/quench\/wp-content\/uploads\/sites\/3\/2021\/05\/focaccia-3771454_1920-1024x621.jpg 1024w, https:\/\/cardiffstudentmedia.co.uk\/quench\/wp-content\/uploads\/sites\/3\/2021\/05\/focaccia-3771454_1920-300x182.jpg 300w, https:\/\/cardiffstudentmedia.co.uk\/quench\/wp-content\/uploads\/sites\/3\/2021\/05\/focaccia-3771454_1920-768x466.jpg 768w, https:\/\/cardiffstudentmedia.co.uk\/quench\/wp-content\/uploads\/sites\/3\/2021\/05\/focaccia-3771454_1920-1536x932.jpg 1536w, https:\/\/cardiffstudentmedia.co.uk\/quench\/wp-content\/uploads\/sites\/3\/2021\/05\/focaccia-3771454_1920.jpg 1920w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><figcaption>Image by Bananalongboards (via <a href=\"https:\/\/pixabay.com\/photos\/focaccia-food-italian-pizza-3771454\/\" target=\"_blank\" rel=\"noreferrer noopener\">Pixabay<\/a>)<\/figcaption><\/figure>\n\n\n\n<p>(Serves 12)<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Strong White Bread Flour \u00d4\u00c7\u00f4 500g<\/li><li>Dried yeast sachets \u00d4\u00c7\u00f4 7g<\/li><li>Olive oil \u00d4\u00c7\u00f4 3tbsp (plus extra for kneading and greasing)<\/li><li>Garlic\/chilli oil \u00d4\u00c7\u00f4 just a dash needed<\/li><li>Cherry Tomatoes \u00d4\u00c7\u00f4 150g<\/li><li>Pitted Mixed Olives \u00d4\u00c7\u00f4 half a packet<\/li><li>Red onion \u00d4\u00c7\u00f4 \u252c\u00a2 sliced into rings<\/li><li>Flaky salt \u00d4\u00c7\u00f4 to garnish<\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Pour the flour into a big bowl. Mix in the yeast on one side of the flour, and then the salt on the other side.<\/li><li>Then mix in altogether.<\/li><li>Make a well shape in the middle of the flour and then add the 2 tbsp of oil. Whilst doing this first step add in lukewarm water from the tap (add this gradually)<\/li><li>Put some flour onto the work surface and then pour the dough on top of it.<\/li><li>Knead for 5-10 minutes until the dough is feeling soft!<\/li><li>Preheat the oven to 200C. When you are done with these first few steps, put the dough into a separate bowl and cover with a tea towel (leave for about an hour).<\/li><li>When you come back to the dough in an hour it should have doubled in size!<\/li><li>Now oil a rectangular shaped tin.<\/li><li>Tip the dough onto the work surface and then stretch it and then leave (covered with a tea towel) for another 45 minutes.<\/li><li>Using your fingers, press gently into the dough to make dimples.<\/li><li>Take 1 tbsp of olive oil, 1 tbsp of water and the crunchy salt flakes and rub over the top of the dough.<\/li><li>Press the cherry tomatoes and olives into the dimples.<\/li><li>Bake in the oven for 20 minutes until it appears golden.<\/li><li>Once out of the oven, using a sharp knife cut the bread into long strips.<\/li><li>Drizzle over some chilli\/garlic or olive oil for flavour. Use as little or as much as you like!<\/li><\/ol>\n\n\n\n<p>So you&#8217;ve prepped your focaccia sticks and Caesar salad for your picnic, and now you just need a drink to accompany. It&#8217;s boujee, it&#8217;s sophisticated and it&#8217;s about to get a <em>whole<\/em> lot better with this cocktail recipe.<\/p>\n\n\n\n<p>(This recipe has been adapted so that you can enjoy it <em>with<\/em> or <em>without<\/em> alcohol)<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Granulated Sugar \u00d4\u00c7\u00f4 4 tbsp<\/li><li>Limes- 6<\/li><li>Mint \u00d4\u00c7\u00f4 4-5 sprigs of fresh leaves<\/li><li>Strawberries \u00d4\u00c7\u00f4 9-10&nbsp;<\/li><li>Sparkling Water (in replacement of rum if serving a non-alcoholic mojito)  \u00d4\u00c7\u00f4 350 ml<\/li><li>Soda water\/ lemonade \/ tonic water \u00d4\u00c7\u00f4 fill the remainder of the jug<\/li><li>White Rum \u00d4\u00c7\u00f4 350ml<\/li><li>Ice \u00d4\u00c7\u00f4 a single ice tray<\/li><li>A cocktail shaker is handy if you have one, if not just use a 2 litre jug.<\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Chop each lime into segments and pop them inside the jug. Then pour in the sugar.<\/li><li>Squish the lime wedges with the end of rolling pin (or equivalent).<\/li><li>Take the leaves of the mint and bruise them with your hands. Throw them into the jug as well.<\/li><li>Fill the jug with the ice cubes, and then add the rum.<\/li><li>Stir well together and then add the sparkling water.<\/li><li>Cut the strawberries into three and pop them into the jug.<\/li><li>You can use old fashioned cloudy lemonade, soda or tonic water instead of sparkling water if you prefer.<\/li><\/ol>\n\n\n\n<p>Don&#8217;t forget your reusable straws (avoid plastic and be more eco-friendly with a more sustainable option), cushions (because no-one enjoys grass-stained shorts), paper plates, and some reusable cups with lids for spillage free drinking! Just remember that in some places it not legal to drink alcohol, so make sure it&#8217;s legal before sipping your mojitos for your post-lockdown picnic!<\/p>\n\n\n\n<p>Instagram:&nbsp;<a
