Here&#8217;s a great little recipe, inspired by winter lattes and Christmasy coffee shops, that&#8217;s a little more challenging but will look mega impressive to the housemates.<\/p>\n<p><b>For the Cake:<\/b><\/p>\n<p>Pop\u252c\u00e1<b>150g of butter<\/b>\u252c\u00e1in the microwave for 20 seconds, just until it&#8217;s soft (not runny) and then mix with\u252c\u00e1<b>150g caster sugar<\/b>\u252c\u00e1until the mixture is smooth. Stir<b>\u252c\u00e12 eggs<\/b>\u252c\u00e1into the mixture and\u252c\u00e1<b>a drop of vanilla essence<\/b>. Once this is all combined, put<b>\u252c\u00e12 tablespoons of milk\u252c\u00e1<\/b>in a glass cup and microwave for 20 seconds, when the milk is warm add\u252c\u00e1<b>a teaspoon full of coffee\u252c\u00e1granules<\/b>\u252c\u00e1and stir until they&#8217;ve melted, then pour into the mixture. Finally add<b>\u252c\u00e1170g of self raising flour<\/b>\u252c\u00e1and give it a bit of elbow grease with a wooden spoon. Tip the mixture into 12 muffin cases and bake in the oven at 180 degrees for 12-15 minutes.<\/p>\n<p style=\"text-align: left\"><b>For the Icing:<\/b><\/p>\n<p style=\"text-align: left\">Soften\u252c\u00e1<b>100g of butter<\/b>\u252c\u00e1as before and gradually stir in\u252c\u00e1<b>250g of icing sugar<\/b>\u252c\u00e1into the butter. Once the mixture is smooth and creamy add\u252c\u00e1<b>1 teaspoon each of ginger and cinnamon<\/b>\u252c\u00e1and\u252c\u00e1<b>a splash of milk<\/b>. Stir the butter cream until it is slightly silky and it&#8217;s done! Add this to the top of the cakes once they&#8217;ve cooled.<\/p>\n<p style=\"text-align: left\"><b>For the Chocolate-Gingerbread:<\/b><\/p>\n<p style=\"text-align: left\"><span style=\"line-height: 1.714285714;font-size: 1rem\">Mix together\u252c\u00e1<\/span><b style=\"line-height: 1.714285714;font-size: 1rem\">120g of soft butter<\/b><span style=\"line-height: 1.714285714;font-size: 1rem\">\u252c\u00e1with\u252c\u00e1<\/span><b style=\"line-height: 1.714285714;font-size: 1rem\">100g of soft dark brown sugar<\/b><span style=\"line-height: 1.714285714;font-size: 1rem\">\u252c\u00e1until smooth, this can be a bit tough so use an electric whisk if you have one. To the mixture add\u252c\u00e1<\/span><b style=\"line-height: 1.714285714;font-size: 1rem\">200g of golden syrup<\/b><span style=\"line-height: 1.714285714;font-size: 1rem\">\u252c\u00e1(if you melt it in the microwave it will mix in easier) along with\u252c\u00e1<\/span><b style=\"line-height: 1.714285714;font-size: 1rem\">250g of plain flour<\/b><span style=\"line-height: 1.714285714;font-size: 1rem\">,\u252c\u00e1<\/span><b style=\"line-height: 1.714285714;font-size: 1rem\">100g of cocoa powder<\/b><span style=\"line-height: 1.714285714;font-size: 1rem\">,\u252c\u00e1<\/span><b style=\"line-height: 1.714285714;font-size: 1rem\">2 teaspoons of ground ginger and a teaspoon of bicarbonate of soda\u252c\u00e1<\/b><span style=\"font-size: 1rem;line-height: 1.714285714\">and give it a good stir, it should make a crumbly mixture so don&#8217;t worry. Wrap the dough in\u252c\u00e1<\/span>cling film,\u252c\u00e1<span style=\"font-size: 1rem;line-height: 1.714285714\">place it in the\u252c\u00e1fridge and let it cool for 30 minutes. Once a bit firmer, place the dough between two sheets of baking parchment and roll out the dough until it&#8217;s as thick as a \u252c\u00fa1 coin.
