Everybody loves cake right? How about vegetable based cakes? We have a look at the rising trend and give you a recipe for a batch of delicious avocado brownies to try for yourself.<\/em><\/p>\n

Cake; that one little word that instantly brings joy. After all, who doesn’t get excited at the prospect of cake? And when I say cake, I’m sure you’re all envisaging a chocolate coated, multi-layer, icing lathered cake. So what if I said vegetable cake? Yes, pretty daunting right? Why on earth would you mix vegetables with cake when cake is already so perfect as is it is? The answer to that is that frankly, vegetable cakes and desserts can be surprisingly delicious. Just think of the carrot cake. When first designed I’m sure it seemed ludicrous, but if you’ve ever tried carrot cake, it’s likely you were surprised with how good it tasted.<\/p>\n

With lots of different vegetable-based cake recipes circulating online and within cookery books, it’s hard not to at least be a little bit intrigued as to what they might taste like. With popular recipes including courgette cake, beetroot cake and avocado brownies, people are getting more and more experimental with ingredients and flavours. Anyway, what better way to make yourself feel better about eating masses of cake by convincing yourself that a vegetable cake definitely counts as one of your 5-a-day?<\/p>\n

So if you’re a keen baker, or just like cake, these recipes can offer something a little different which may just surprise you. If you’re reading this thinking that it is still completely ludicrous, I dare you to try these avocado brownies:<\/p>\n

Makes 8-10<\/p>\n

Ingredients:<\/p>\n

* 1 large ripe avocado<\/p>\n

* 425g light brown sugar<\/p>\n

* 50g cocoa powder<\/p>\n

* 100g unsalted butter<\/p>\n

* 2 eggs<\/p>\n

* 1 tsp of vanilla extract<\/p>\n

* 1 tsp salt<\/p>\n

* 70g plain flour<\/p>\n

* 100g plain chocolate chips<\/p>\n

Method:<\/p>\n

    \n
  1. First, preheat the oven to 170 degrees and line a large baking dish with butter.<\/li>\n
  2. Remove the skin and the stone from the avocado and put the flesh into a large bowl. Mash the flesh with the back of a fork until it forms a smooth paste. Once smooth add in the sugar and cocoa powder and stir until mixed, it should form quite a thick gloopy mixture.<\/li>\n
  3. Next, melt the butter in the microwave and allow to cool slightly for a minute or so. Then add the butter to the cocoa mixture and mix thoroughly.<\/li>\n
  4. Crack the two eggs and add them to the bowl along with the vanilla extract and salt, once combined add the flour and the chocolate chips.<\/li>\n
  5. Transfer the mixture into the lined baking dish and cook for about 40 minutes. To check that the brownie has cooked through, place a knife through the centre. If it comes back clean it’s ready.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"
