With the British public currently engrossed in a baking frenzy, Quench Food & Drink brings you some fab student friendly cake recipes to feed your baking binge.

ThereÔÇÖs an epidemic currently encompassing the whole of the T.V-watching British public and as much as you may not want to admit it, weÔÇÖve all been well and truly hit by The Great British Bake Off bug. Whether youÔÇÖre an avid watcher of the series, a recipient of baked goods inspired by the show, or simply a witness to the mass of Twitter abuse certain contestants have received, the BBCÔÇÖs hit show, now in its 5th series, has brushed off on us all.

As the grand finale approaches and the baking madness hits fever pitch, Quench Food & Drink are here to aid the cake shaped hole in your life with two student friendly recipes. Cheap, simple and with a good measure of alcohol, these recipes from Baking Mad.com will have your house mates begging for more (cake).

Guinness Cake

Ingredients:

  • 300g butter
  • 400g dark muscovado sugar
  • 200ml Guinness
  • 75g cocoa powder
  • 150ml sour cream
  • 2 eggs
  • 275g self-raising flour
  • 1 tsp baking powder
  • 300g cream cheese
  • 200g icing sugar

Method:

  1. Preheat the oven to 180 degrees and grease a large, round baking tin.
  2. Place 250g of the butter, the muscovado sugar and cocoa powder in a pan and heat gently until the butter has melted. Mix occasionally with a wooden spoon.
  3. Stir in the Guinness and pour into a large mixing bowl.
  4. Beat the sour cream in, then add the eggs and mix thoroughly.
  5. Stir the flour and baking powder in and then pour the mixture into the baking tin and bake in the oven for 45 minutes.
  6. To make the topping, beat the remaining butter with the cream cheese and icing sugar until smooth.
  7. When the cake has cooled, smother the top with the butter cream, and never leave the cake unattended again (it will be eaten by your housemates if not under constant supervision!)

 

Peanut Butter Cookies

Ingredients:

  • 125g butter
  • 195g light muscovado sugar (you can use caster sugar if itÔÇÖs cheaper)
  • 1 egg
  • 1 tsp vanilla extract
  • 190g plain flour
  • ┬¢ tsp baking powder
  • ┬¢ tsp bicarbonate of soda
  • 300g chunky peanut butter (the Tesco value oneÔÇÖs great)

Method:

  1. Preheat the oven to 170 degrees and line two baking trays with grease-proof paper.
  2. Cream the butter and sugar together in a large mixing bowl until pale and smooth, then stir in the egg and vanilla extract.
  3. Sift the flour, baking powder and soda into the mixture slowly, making sure to give all the ingredients a good stir so they mix thoroughly. Then stir in the peanut butter.
  4. Taking small pieces of the dough, roll into 1 inch wide balls and place on the baking tray, equally spaced apart. Press the balls down slightly with the back of a spoon.
  5. Pop the tray in the oven and bake for around 10 minutes until they start to crack on the top and are golden brown in colour.
  6. Leave to cool for around 15 minutes, then devour with a glass of milk!
