Words by Caterina Dassie’

On the night of October the 1st, the Dusty Knuckle was awarded for its commitment to sustainable practices. The Cardiff pizzeria won the ÔÇÿPeopleÔÇÖs Favourite RestaurantÔÇÖ in the Sustainable Restaurant AssociationÔÇÖs ÔÇÿFood Made Good AwardsÔÇÖ in London.

The pizzeria is run and owned by Phill and Deb Lewis, an husband and wife team, whose business journey begun by joining local markets and festivals in late 2014. It was not only until June 2016 that they opened The Printhaus, in Canton, an outdoor patio, where you can fully enjoy their Neapolitan style pizza. Yet, they still have their mobile pizza oven running if you would like to hire them for a special occasion.

Since the business started running, Dusty Knuckle has been the spokesman of the ÔÇÿSlow FoodÔÇÖ movement. They are extremely keen in providing the finest pizza made out of high-quality and local products. Indeed, they are passionate about telling the origin of the food they serve to make the consumers understand the importance of eating fair and sustainable food.

Phill Lewis, Dusty KnuckleÔÇÖs head chef, told Quench: ÔÇ£We have always been passionate about sustainability. We care about good food and about encouraging people to ask where their food comes from and how it is made, and our customers, the people of Cardiff, have always gotten behind us and supported that too.ÔÇØ Yet, it seems like they have not just got the support of people from Cardiff, but also nation-wide, as the award has shown.

For the Food Made Good Awards, hundreds of sustainable restaurants had been nominated by members of the public with a jury of three food experts then choosing three finals which they believed did the most to support local producers and community, all whilst reducing overall food waste.

The Final decision was made via a public vote. The award was unexpectedly won by the Dusty Knuckle team as the other two running restaurants were the Breakfast Club, in Soho, London, and the Michelin Star Black Swan restaurant in Yorkshire. Indeed, the Dusty Knuckle was Gobsmacked: ÔÇ£We weren’t expecting to win at all, so I think we went a bit crazy when they announced it! It’s one of the most exciting things that has ever happened to us at Dusty Knuckle. We are all absolutely thrilledÔÇØ admitted Phill to Quench.

But what are the next steps for the award winning Cardiff business?

ÔÇ£Next year is going to be a very big year for us ÔÇô we canÔÇÖt say exactly what weÔÇÖre up to just yet but picking up this award before it all kicks off has given us a real boost; we canÔÇÖt wait to reveal what else we have planned. All we can say for now is watch this space!ÔÇØ Phill told Quench.

We didnÔÇÖt manage to make him reveal their future plans, but weÔÇÖll definitely keep an eye out for the next developments and letÔÇÖs just hope they will be as good as their food is.
